Chicken Stuffed Apples

Dessert apples stuffed with diced chicken and fruit in mayonnaise, suitable for buffet party or summer lunch (Serves 4, cold)


8 oz white cooked chicken meat
½ pint mayonnaise
2 oz pineapple chunks
3-4 oz grapes
2 stalks celery
4 large apples
1 level teaspoon grated lemon rind
2 tablespoons slivered almonds

½ teaspoon salt
¼ teaspoon pepper
½ level teaspoon dried mustard
½-¾ teaspoon sugar
1 egg (or 2 egg yolks)
¼-½ pint salad oil
1 tablespoon lemon juice
1-2 tablespoons wine vinegar


1. Make Mayonnaise: Put pepper, mustard and sugar into liquidizer. Add egg. Mix thoroughly at low speed. Add a few drops of oil. Mix well. Then add remaining oil in steady stream until it has been absorbed and mayonnaise is very think. Add lemon juice, vinegar, salt and 1-2 tablespoons boiling water, which thins it and helps to make it keep.

2. Add lightly beaten cream and season mayonnaise to taste.

3. Dice chicken finely and mix with drained pineapple chunks, peeled seeded grapes and chopped celery. Mix with Mayonnaise.

4. Polish apples and cut in half. Scoop out flesh with a grapefruit knife or spoon. Remove core and dice remaining apple; add to mayonnaise.

5. Fill the apple halves with chicken mayonnaise. Sprinkle top with grated lemon rind and lightly browned almonds.
