Oven Fried Chicken

Chicken pieces coated with egg and breadcrumb mixture, baked in the oven and served with piquant tomato sauce (Serves 4, hot)


4 chicken parts or quarters
1-1½ oz flour
a little paprika
1-2 eggs
4-6 tablespoons breadcrumbs
4 tablespoons butter

1 oz butter
1 onion
1 clove garlic
½ oz flour
2 level tablespoons tomato puree
1 small tin tomatoes
½ pint stock
1 tablespoon chopped mixed herbs
6 peppercorns
Strips of lemon rind
Pinch of cayenne pepper
1 teaspoon sugar


1. Roll chicken pieces in flour seasoned with salt, pepper and paprika, brush thoroughly with beaten egg and roll in dried breadcrumbs. Put chicken in a well buttered ovenproof dish.

2. Pour melted butter over chicken, put into oven and cook for 30-35 minutes, or until pieces are crisp and brown.

3. Meanwhile, make tomato sauce: Melt butter, cook finely chopped onion and crushed garlic until golden. Sprinkle in flour and add tomato puree, tinned tomatoes and stock. Bring to the boil; simmer for 20 minutes adding herbs, peppercorns, lemon rind and a pinch of cayenne pepper. Strain sauce and add sugar. Season to taste.

4. Serve the chicken very hot with sauce and rice or mashed potatoes.
