Oyster Stuffing for Roast Turkey

This is a recipe for Turkey Roast stuffing.


1 pint oysters in own liquid
12-15 oz fresh breadcrumbs
8 oz butter
2 chopped mild onions
3-4 stalks sliced celery
3 tablespoons parsley chopped
Juice of ½ lemon


1. Prepare (or buy ready prepared) oyesters in their own salty juice. Prepare breadcrumbs made with two day old loaf. Melt butter and cook onions and celery until soft and light golden brown.

2. Add to breadcrumbs, with chopped herbs and seasoning, lemon juice and the oysters cut in half if large. If too dry, a little white wine or stock may be added, but it must not be too soft. Fill turkey cavity and sew up carefully.
