4-5 oz turkey chopped
3-4 oz ham chopped
1 packet of frozen puff pastry, about 1 pound
1 egg
1½ oz butter
1 onion
1¼ oz flour
½ pint milk
1 tablespoon parsley
salt, pepper, a pinch of mace

Pre-heat oven to 500°F

1. Roll out pastry until ¼ inch thick. Using 2½ inch diameter pastry cutter, cut out 8 parries. now using a smaller cutter, 1½ inch in diameter, make a central cut in each patty being careful not to cut through to the bottom. Brush surface of each patty with beaten egg. Do not allow egg to run over side or this will prevent pastry rising.

2. Put on a dampened baking sheet and bake for about 15-20 minutes until patties have risen and are golden brown. Remove from oven, take off center lids carefully and reserve. Scoop out the soft pastry inside and throw away. Keep warm.

3. Meanwhile make filling: Melt butter and cook finely chopped onion for 5-6 minutes to soften. Mix in flour. Add milk, Blend well before bringing to boil, stirring all the time. Add chopped turkey and ham, parsley and seasoning. Heat together and spoon into patty shells. Place lids on top and serve at once, or keep warm for a short time.
